Fluffy American pancakes

The American pancakes are already clearly different from most of the pancake varieties known in Europe. The pancakes that are common in the USA and Canada usually have a diameter of about 10 cm (there are also coin-sized versions) and are significantly thicker and fluffier. The consistency is achieved by a relatively thick dough (1: 1) and the addition of driving means (soda or baking powder). Often the pancakes are prepared instead of milk with buttermilk. Traditionally, pancakes are eaten in the Americas for breakfast. Often served with maple syrup, blueberry pancakes also belong to the classics, where the blueberries are mostly baked in the dough. In recent years, however, pancakes have become increasingly popular and are now being eaten in a variety of hearty and sweet variants for dinner. As sweet doughs are also sweetened, the American pancakes are much sweeter than their European relatives.

Steps

1
Done

Provide Ingredients

For the real American pleasure, it also needs the maple syrup. After being baked, the syrup is poured over the hot pancakes and therefore it also has to be prepared at the same time.

2
Done

Processing liquids

Separate the eggs and beat the egg whites stiff with a pinch of salt.
Mix the egg yolk with the buttermilk and the snowbeet.

3
Done

Mix solid ingredients

Mix the sugar, flour and baking powder together in a large bowl.

4
Done

Mix all the ingredients together

Now, all the ingredients except the solid egg yolk are mixed together in the large bowl until there is no lumps in the dough.
Then the egg white is underlined.
Subsequently, the dough is baked in small portions (about 2 tablespoons) in a hot coated pan without butter. When the dough bubbles up above you can turn the pancake and bake again for about 1-2 minutes at medium heat. The diameter should be 10-15 cm.
Caution: if the dough is still liquid after turning and baking, briefly cover a lid and bake for another 2 minutes.
TIP: for gourmets you can also mix fruits such as banana, blueberries or chocolate pieces under the dough and bake immediately.

Finish the pancakes

At the end, put all the pancakes on a pile and, depending on the taste, drip syrup or leave it to each individual.
Good Appetite!
